Having lived in Singapore and travelled, I have a passion for Vietnamese cuisine. It is so fresh and vibrant and colourful, which makes it one of my favourite cuisines to cook.
I describe my style of cooking as ‘ish’. Which means I look to global cuisines, and using a handful of authentic ingredients, give local produce an exotic flair. So my recipes are a nod and a wink, a salutation if you will, to wonderful world cuisines. But with a real depth of knowledge and understanding of what makes that cuisine special.
