I describe my style of cooking as ‘ish’. Which means I look to global cuisines, and using a handful of authentic ingredients, give local produce an exotic flair. So my recipes are a nod and a wink, a salutation if you will, to wonderful world cuisines. But with a real depth of knowledge and understanding of what makes that cuisine special.

Your Teacher

Rozanne is a wholefood chef and culinary director of Noosphere, a zerowaste test kitchen based in Dublin City University, working on eliminating food waste and improving human and planetary health through better food practices and recipe development. Although she is probably best known for her distinctive voice on radio with Pat Kenny, food writing and her many years as a cookery teacher. Inspired by global cuisines, fresh produce, interesting ingredients and being mindful about waste. Rozanne runs fun and informative zerowaste onsite cookery demonstrations for universities, companies and food cooperatives.
