In this session you’ll learn to julienne and brunoise vegetables for your own delicious home-made pickles and you'll be finely slicing and dicing onions and herbs to make a herb salsa.
You’ll also prepare ‘Home Cured Mackerel with Apple and Celeriac Remoulade' whilst learning a variety of tricky knife skills from filleting a whole mackerel to segmenting citrus fruit for a light side salad.
