About this class

If you have been to Naples, chances are that you have seen the many stalls selling a variety of delicious street food: small pizza, arancini, crocchette, fried polenta, fritters of all sorts and shapes, and delicious pastries filled with cheese and salami. Our tradition of street food (also called rosticceria) is long and well established in Naples. In this course, you will learn how to make two classics of Neapolitan street food: pizza montanara (a delicious fried pizza) e panzarotti di patate (rich potatoes and mozzarella croquettes).

Silvana is a 4th generation artisan pasta maker from Naples. Her passion is to teach the dying art of making pasta entirely by hand, saving rare pasta shapes from disappearing and helping pasta lovers to recreate the authentic Italian experience, teaching techniques passed down to her by her family. Her grandma, Nonna Rosa, has taught her everything she knows, started training her when she was just a teeny weeny 5-year-old.
