What happens in this class?

Students will learn the art of lacto-fermentation; how to safely ferment and how to create their own fermented recipes. As well, the session explores the gut and how fermented foods support the gut.

The masterclass will de-mystify the fermentation process and help to make it simple, relatable, practical and enjoyable.

In the masterclass students will make four ferments: sauerkraut, kimchi, fermented jam and brined pickles.

A full list of ingredients and equipment required for the session list provided when you book.

All recipes are vegan.

Really enjoyed the class. Nena was very informative and obviously passionate about using fermentations for health. I can comment on the results as I must wait for them to ferment but what I tasted already seemed delicious already and authentic. My only gripe is with Obby and its system and I will contact them directly about that. Luckily Nena was able to sort them out and I only missed the first 20mins or so.

Your Teacher

Nena is a trained Natural Chef (College of Naturopathic Medicine), specialising in whole, unprocessed and plant-based food. She works as a freelance chef, cookery and fermentation teacher, teaching both children and adults. She also develops recipes for brands and other chefs, as well as, she works as a food stylist for magazines, cookbooks and newspapers.

She caught the fermenting bug during her chef training and since has enjoyed experimenting and sharing her passion with others.
