What happens in this class?

In this session we'll provide you with an introduction to the techniques and processes involved with smoking and curing, learning about how to apply salt and smoke to products to gently enhance their flavour. Over the course of the session we will then prepare, cook and eat:

The salt beef Reuben sandwich including: fresh dill pickles, a punchy russian dressing, a home cured lump of English beef saltbeef, cold-smoked butter and blow torch cheese.

Things to remember

We'll provide aprons and gloves and the like. Please wear closed toe shoes and clothes that you don't mind getting a bit salty/beefy/smokey.
