Fourteen session course
Tea Sommelier Certification* * is a recognised qualification from the Tea and Herbal Association of Canada. Complete all 8 classes for qualification**, or just pick and choose classes according to your specific interest.
Each class is 1.5 days.
Tea 101 – Introduction to tea - Jan 24th-25th This is an introduction course designed for the novice tea enthusiast whether pursuing a career in the hospitality industry or enhancing their enjoyment of tea. This course will provide an introduction on the history of the origin of tea, where students will learn how to differentiate the types of tea, as well as the tea grading standards used in the industry. You will be initiated into the basics of tea terminology and proper cupping techniques.
Tea 102 – Tea Regions of the world - Jan 26th-27th Come and examine in detail the principal tea-growing regions of the world and develop a fundamental understanding of tea. Taste and evaluate teas that are representative of each region - China, Sri Lanka, Japan, Kenya and more.
Tea 103 – Sensory Development - Jan 28th-29th Tasting is the most important skill in the business of Tea. How do we taste? What errors can we make when tasting.
Tea 104 – Tea Type - Dates TBC This class covers the types of teas produced in different regions in the world. Tasting and style comparisons will be a major component of this class.
Tea 105 – From Bush to Cup - Dates TBC We learn more about cultivation and processing practices used in the production of tea and the impact of various processing decisions for the finished tea product.
Tea 106 – Preparation, Consumption & Health -Dates TBC This class covers how tea is prepared and and consumed in different parts of the world . We also look at the Health of Tea - myths and facts.
Tea 107 – Menu Design, Food Pairing & Cooking - Dates TBC Let's explore the ideas and principles of using tea as an ingredient in cooking, baking, cocktails, pairing tea with food, and creating the perfect tea menu.
Tea 108 – The Business of Tea - Dates TBC Discover the sectors that make up the tea industry: commodity traders and auctions, packers and retailers. Who are they, what do they do and what are their challenges ?
